Its been a crazy summer!

So wow I'm not the best at this whole blog thing. I can admit it! So with that said I have a lot to update. Im so happy to report that I've been cooking like mad! With catering all kinds of fun parties baby blessings, friend get togethers, work dinner parties, birthdays and more! Plus cooking classes which I love! Last month was a brunch theme. We made mini frittatas, almond crusted french toast with home made syrup and raspberries, maple glazed bacon and an orange-pineapple yogurt smoothie. It was delicious! The latest party I catered was a Mexican Fiesta at the Kandells beautiful home. The night started out crazy with a rain storm and traffic! Oh the traffic it took me and my friend Tiffany (who saved my life that night!) 1 1/2 hours to get there! which should have been more like 20 min. Then we arrived and quickly set up for the night. I made Langostine (mini lobster tail) Ceviche and Chorizo wrapped in bacon for the appetizers along with Chips, Salsa and Guacamole. Then the usual Spanish rice and beans. Grilled Corn on the cob with a chile-lime sauce and queso fresco. A sweet corn salad and a watermelon and cherry fruit platter. The night was finished with Churros in a dulce de leche coconut sauce and some lime sherbert. Yumm what a feast it was, not to mention the Taco Truck and a mechanical bull. It was amazing!
So the next events Im working on will be Cooking class at Aubree's house this month and then Jodees daughter Averys birthday party in an orchard. Its going to be ridiculously cute! I cant wait!

Favorite Chewy Chocolate Chip Cookies Recipe

3 1/2 cups AP Flour
3/4 teaspoon baking powder
1/2 teaspoon salt
2 sticks butter, melted and cooled
1 1/4 cups brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 large egg yolks
1 tablespoon vanilla
1 cup semi sweet chocolate chips
1 cup milk chocolate chips

Directions preheat oven 350 degrees
In a bowl whisk dry ingredients together and set side. In a mixer fitted with a paddle attachment cream melted butter and sugars together for 1-2 min. (melted butter makes the center chewier) Add the eggs and vanilla on med-low speed one at a time and scrape bowl a couple times to ensure an even mix. Add flour mixture on low speed slowly and scape down when mixed add the chocolate chips and mix until combined. Using a scoop is the best method to ensure even sized cookie but if not make 2 tablespoon sized balls of dough and place them at least 2 inches apart. Bake until the edges are golden but the centers are soft and puffy. 17-20 minutes. Let them cool on baking sheet for 10 min. Then serve warm and enjoy!!!

Join the Club!

Foodie, [ˈfuːdɪ] - A person having an enthusiastic interest in the preparation and consumption of great food.

To all my friends out there I am starting this blog to share my love of food and teaching. Each month I teach Cooking Clubs with my favorite recipes and tips.
I will be posting recipes and photos from our clubs. The Clubs are a fun night out with your friends where we typically make an appetizer, main course and dessert progressively through the night and eat along the way. If you follow my blog and like what you see, contact me about starting your own club with 10 or more of your friends.

For those of you out there that don't know me. My name is Aubrey, I'm 25 and Cooking is my passion. I am a mother of 2 tiny babes, my daughter Natalia is 2 and Hudson is 1. They keep me running around crazy but I wouldn't change that for the world. I love bringing Natalia in the kitchen and cooking and baking with her she loves to help and will try anything once. Its amazing how children are so trusting. I love my little taster :) Lately shes says to me "Mom you a good cooker" and tonight she said "mom you make the best corn!" It was corn on the cob dripping with butter and a touch of salt she loved it, it was so sweet.

As far as my credentials go, I started out as a curious cook but that soon changed to going to culinary school, I graduated from UVU in Culinary Arts in 2007. Since then I have been a Private Chef, Catered small events and parties and currently started cooking clubs. I teach each group once a month. I love it and would love to have more clubs.
